Description

Sweet Chili Beef with Peppers is a quick and flavorful weeknight dinner that combines tender beef, crispy peppers, and a sweet and spicy chili sauce. This dish is easy to prepare and can be customized to fit various taste preferences.


Ingredients

  • 1 lb (450g) sirloin or ribeye beef, thinly sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 jalapeño pepper, sliced (optional for spice)
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1/4 cup soy sauce
  • 1/4 cup sweet chili sauce (store-bought or homemade)
  • 1 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 1 tsp cornstarch mixed with 2 tbsp water (slurry)
  • 2 green onions, chopped (for garnish)
  • 1 tbsp sesame seeds (for garnish)
  • Cooked rice or noodles (for serving)

Instructions

  1. In a bowl, combine the soy sauce, sweet chili sauce, brown sugar, rice vinegar, and cornstarch slurry. Mix well and set aside.
  2. Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat.
  3. Add the sliced beef and stir-fry for 2-3 minutes until browned. Remove from the pan and set aside.
  4. In the same pan, add the remaining oil and sauté the garlic and ginger until fragrant.
  5. Add the sliced bell peppers and jalapeños, stir-frying for 2-3 minutes until slightly softened.
  6. Return the cooked beef to the pan and pour in the prepared sauce. Stir well to coat all ingredients.
  7. Cook for another 2 minutes until the sauce thickens and everything is well combined.
  8. Garnish with chopped green onions and sesame seeds.
  9. Serve hot over cooked rice or noodles.

Notes

  • For a spicier version, add more jalapeños or a pinch of red pepper flakes.
  • You can substitute chicken or tofu for beef to suit dietary preferences.
  • Use gluten-free soy sauce for a gluten-free version.
  • Adjust the sweetness of the sauce by adding more or less brown sugar.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
