Description

Hummingbird Cake is a delightful dessert that combines ripe bananas, crushed pineapple, and nuts, creating a moist and flavorful cake that is a Southern classic.

Ingredients

Scale
  • 3 cups all-purpose flour 🌾
  • 2 cups sugar 🍚
  • 1 tsp baking soda 🧂
  • 1 tsp ground cinnamon 🌿
  • 1/2 tsp salt 🧂
  • 1 cup vegetable oil 🛢️
  • 3 large eggs, beaten 🥚
  • 1 tsp vanilla extract 🍦
  • 1 cup crushed pineapple, drained 🍍
  • 2 cups ripe bananas, mashed 🍌
  • 1 cup chopped pecans or walnuts (optional) 🌰
  • 8 oz cream cheese, softened 🧀
  • 1/2 cup unsalted butter, softened 🧈
  • 4 cups powdered sugar 🍚
  • 1 tsp vanilla extract 🍦

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare three 9-inch round cake pans by greasing and dusting them with flour.
  2. In a large mixing bowl, whisk together the dry ingredients: flour, sugar, baking soda, cinnamon, and salt.
  3. In another bowl, mix the wet ingredients: vegetable oil, beaten eggs, and vanilla extract.
  4. Gradually add the wet mixture to the dry ingredients, stirring gently until just combined.
  5. Fold in the crushed pineapple, mashed bananas, and chopped nuts until evenly distributed.
  6. Divide the batter among the prepared cake pans and bake for 25-30 minutes, or until a toothpick comes out clean.
  7. Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
  8. For the frosting, beat together cream cheese and butter until creamy, then gradually add powdered sugar and vanilla extract until smooth.
  9. Assemble the cake by layering the cooled cakes with cream cheese frosting in between and on top, decorating as desired.

Notes

  • Use ripe bananas for the best flavor.
  • Drain the crushed pineapple well to avoid a soggy cake.
  • Use room temperature ingredients for better mixing.
  • Check baking time a few minutes early to avoid overbaking.
