Description
Crispy Feta Pockets are small pastries filled with a delicious mixture of feta and ricotta cheese, along with fresh herbs, encased in flaky phyllo dough.
Ingredients

- 1 cup crumbled feta cheese
- 1/2 cup ricotta cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh dill
- 1/2 tsp black pepper
- 1 package of phyllo dough (about 20 sheets)
- 1/2 cup melted butter
- Sesame seeds for topping (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the crumbled feta cheese, ricotta cheese, chopped parsley, chopped dill, and black pepper.
- Take one sheet of phyllo dough, lay it flat, and brush it with melted butter. Repeat with another sheet on top.
- Cut the layered phyllo dough into rectangles, approximately 4×6 inches.
- Place a spoonful of the cheese filling at one end of each rectangle and fold the sides over the filling.
- Roll up the phyllo dough tightly from the filled end to create a pocket.
- Place the pockets seam-side down on a baking sheet, brush the tops with melted butter, and sprinkle sesame seeds if desired.
- Bake in the preheated oven for 20-25 minutes until golden brown and crispy.
Notes
- Keep phyllo dough covered with a damp cloth to prevent it from drying out.
- Rotate the baking sheet halfway through baking for even cooking.
- Let the pockets cool slightly before serving.
