Description

Crispy Feta Pockets are small pastries filled with a delicious mixture of feta and ricotta cheese, along with fresh herbs, encased in flaky phyllo dough.


Ingredients

  • 1 cup crumbled feta cheese
  • 1/2 cup ricotta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh dill
  • 1/2 tsp black pepper
  • 1 package of phyllo dough (about 20 sheets)
  • 1/2 cup melted butter
  • Sesame seeds for topping (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the crumbled feta cheese, ricotta cheese, chopped parsley, chopped dill, and black pepper.
  3. Take one sheet of phyllo dough, lay it flat, and brush it with melted butter. Repeat with another sheet on top.
  4. Cut the layered phyllo dough into rectangles, approximately 4×6 inches.
  5. Place a spoonful of the cheese filling at one end of each rectangle and fold the sides over the filling.
  6. Roll up the phyllo dough tightly from the filled end to create a pocket.
  7. Place the pockets seam-side down on a baking sheet, brush the tops with melted butter, and sprinkle sesame seeds if desired.
  8. Bake in the preheated oven for 20-25 minutes until golden brown and crispy.

Notes

  • Keep phyllo dough covered with a damp cloth to prevent it from drying out.
  • Rotate the baking sheet halfway through baking for even cooking.
  • Let the pockets cool slightly before serving.
