- 4 slices of bacon, chopped
- 2 medium potatoes, diced
- 1 small onion, diced
- 1 bell pepper, diced
- 4 large eggs
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat a large skillet over medium heat and add the chopped bacon. Cook until crispy, about 5-7 minutes. Remove and set aside, keeping the drippings in the skillet.
- Add the diced potatoes to the skillet and cook for 10-15 minutes, stirring occasionally, until golden brown and tender.
- Add the diced onion and bell pepper to the skillet and cook for an additional 5 minutes until softened.
- Return the crispy bacon to the skillet and mix everything together. Adjust seasoning with salt and pepper.
- Create small wells in the mixture and crack an egg into each well. Cover and cook for 5-7 minutes until the whites are set.
- Sprinkle shredded cheddar cheese over the top, cover, and cook for another 2-3 minutes until melted.
