Description

Cheesy bacon and egg hash is a hearty breakfast dish that combines crispy bacon, tender potatoes, and fluffy eggs, all topped with melted cheese.


Ingredients

  • 4 slices of bacon, chopped
  • 2 medium potatoes, diced
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat a large skillet over medium heat and add the chopped bacon. Cook until crispy, about 5-7 minutes. Remove and set aside, keeping the drippings in the skillet.
  2. Add the diced potatoes to the skillet and cook for 10-15 minutes, stirring occasionally, until golden brown and tender.
  3. Add the diced onion and bell pepper to the skillet and cook for an additional 5 minutes until softened.
  4. Return the crispy bacon to the skillet and mix everything together. Adjust seasoning with salt and pepper.
  5. Create small wells in the mixture and crack an egg into each well. Cover and cook for 5-7 minutes until the whites are set.
  6. Sprinkle shredded cheddar cheese over the top, cover, and cook for another 2-3 minutes until melted.
