- 1/2 cup peanut butter or almond butter
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 2 cups rolled oats
- 1/2 cup chopped walnuts or pecans
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- Pinch of salt
- Optional: chocolate chips, dried fruits, or seeds
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the mashed bananas, nut butter, honey, and vanilla extract until smooth.
- In another bowl, mix the rolled oats, chopped nuts, baking powder, cinnamon, and salt.
- Fold in any optional ingredients like chocolate chips.
- Line an 8×8-inch baking dish with parchment paper and pour the mixture in, spreading it evenly.
- Bake for 25-30 minutes until golden brown.
- Allow to cool for 10 minutes, then cut into squares.
Notes
- Use very ripe bananas for the best sweetness.
- Store in an airtight container for up to a week at room temperature or two weeks in the fridge.
