Banana Nut Breakfast Bars are a quick and nutritious breakfast option, easy to make and packed with wholesome ingredients.


Ingredients

  • 3 ripe bananas
  • 1/2 cup peanut butter or almond butter
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 2 cups rolled oats
  • 1/2 cup chopped walnuts or pecans
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • Pinch of salt
  • Optional: chocolate chips, dried fruits, or seeds

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the mashed bananas, nut butter, honey, and vanilla extract until smooth.
  3. In another bowl, mix the rolled oats, chopped nuts, baking powder, cinnamon, and salt.
  4. Fold in any optional ingredients like chocolate chips.
  5. Line an 8×8-inch baking dish with parchment paper and pour the mixture in, spreading it evenly.
  6. Bake for 25-30 minutes until golden brown.
  7. Allow to cool for 10 minutes, then cut into squares.
