Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the rolled oats, baking powder, cinnamon, and a pinch of salt.
  3. In another bowl, whisk together the almond milk, maple syrup, and the beaten egg. Add the vanilla extract.
  4. Pour the wet mixture into the bowl with the dry ingredients and stir gently until just combined.
  5. Gently fold in the mixed berries and half of the sliced almonds.
  6. Pour the oatmeal mixture into a greased 8×8-inch baking dish and sprinkle the remaining sliced almonds on top.
  7. Bake for 30-35 minutes until the top is golden brown and the oatmeal is set.
  8. Let it cool for a few minutes, then serve warm, drizzled with honey or additional maple syrup if desired.
