Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the rolled oats, baking powder, cinnamon, and a pinch of salt.
- In another bowl, whisk together the almond milk, maple syrup, and the beaten egg. Add the vanilla extract.
- Pour the wet mixture into the bowl with the dry ingredients and stir gently until just combined.
- Gently fold in the mixed berries and half of the sliced almonds.
- Pour the oatmeal mixture into a greased 8×8-inch baking dish and sprinkle the remaining sliced almonds on top.
- Bake for 30-35 minutes until the top is golden brown and the oatmeal is set.
- Let it cool for a few minutes, then serve warm, drizzled with honey or additional maple syrup if desired.
