- Egg wash (1 egg beaten with 1 tbsp water) 🥚
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine the crumbled feta cheese, halved cherry tomatoes, olive oil, dried oregano, garlic powder, and red pepper flakes (if using). Mix until well combined.
- Roll out the thawed puff pastry on a lightly floured surface to about 1/8 inch thick and cut into 3×3 inch squares.
- Place a spoonful of the feta mixture in the center of each pastry square, fold the corners over the filling, and pinch the edges to seal.
- Brush the tops of each pastry pocket with the egg wash.
- Arrange the bites on a baking sheet lined with parchment paper and bake for 20-25 minutes until golden brown.
